Caramelized Onion Dip

Ingredients

  • 3 medium yellow onions
  • 2 tbsp salted butter
  • 2 tsp each salt & sugar
  • ¼ cup dry white wine
  • 12 oz sour cream
  • 8 oz cream cheese, softened
  • 1 garlic clove, grated (optional)
  • Fresh parsley, chopped, to taste
  • A few dashes Worcestershire or soy sauce, to taste

    Prep: Peel & thinly slice onions (a mandoline works great).

    Sauté: Melt butter in skillet over medium heat. Add onions, salt &

    sugar. Cook 10--15 mins, stirring now and then. Add wine in small

    splashes as it cooks down. After ~30 mins, onions should be golden and

    super fragrant.

    Chop: Transfer onions to a board and roughly chop (or snip in pan with

    scissors).

    Mix: In a bowl, mix cream cheese + sour cream. Stir in onions,

    parsley, and season to taste. Add a splash of soy/Worcestershire or

    grated garlic if you like. Serve warm or chilled---both are delish!

Tips

1.Swap some sour cream or cream cheese with mayo if you prefer.

2.No wine? Use water instead, and maybe a splash of lemon juice for acidity.
