Caramelized Onion Dip

Ingredients
- 3 medium yellow onions
- 2 tbsp salted butter
- 2 tsp each salt & sugar
- ¼ cup dry white wine
- 12 oz sour cream
- 8 oz cream cheese, softened
- 1 garlic clove, grated (optional)
- Fresh parsley, chopped, to taste
- A few dashes Worcestershire or soy sauce, to taste
Instructions
- 01Prep: Peel & thinly slice onions (a mandoline works great).
- 02Sauté: Melt butter in skillet over medium heat. Add onions, salt &
- 03sugar. Cook 10--15 mins, stirring now and then. Add wine in small
- 04splashes as it cooks down. After ~30 mins, onions should be golden and
- 05super fragrant.
- 06Chop: Transfer onions to a board and roughly chop (or snip in pan with
- 07scissors).
- 08Mix: In a bowl, mix cream cheese + sour cream. Stir in onions,
- 09parsley, and season to taste. Add a splash of soy/Worcestershire or
- 10grated garlic if you like. Serve warm or chilled---both are delish!
Tips
1.Swap some sour cream or cream cheese with mayo if you prefer.
2.No wine? Use water instead, and maybe a splash of lemon juice for acidity.
