Chicken Caesar Pasta Salad

Ingredients

For the Dressing:

  • 2 tsp Dijon mustard
  • 2 tbsp lemon juice
  • 2 tsp Worcestershire sauce
  • ¾ cup mayo
  • 2 tsp minced garlic
  • 1 tsp anchovy paste
  • ⅓ cup grated Parmesan

For the Pasta Salad:

  • 8 oz rotini or penne pasta
  • 2 Romaine hearts, chopped
  • Cooked chicken (rotisserie or grilled)
  • Croutons (optional)
  • Parmesan, for topping

Instructions

    Whisk mustard, lemon juice, Worcestershire, mayo, garlic & anchovy

    paste until smooth.

    Stir in Parmesan and ¼ tsp black pepper. Set aside.

    Make the Pasta Salad:

    Cook pasta in salted water until al dente (about 10 mins). Drain and

    cool slightly.

    Toss pasta with Romaine and chicken in a large bowl.

    Add dressing and mix well. Top with croutons and extra Parmesan.
