Cheesy Stuffed Beef & Mashed Potato Tortilla Quesadilla

Ingredients
- Potato: 1
- Flour tortillas: 2
- Ground beef or pork: approx. 100g
- Onion or garlic: about half a small one
- Tomato: 1, peeled and diced
- Cheese slices: 4
- Ketchup: 2 tablespoons
- Mayonnaise: to taste (a squirt or stripe)
- Black pepper: to taste
Instructions

Mince the beef and finely chop the onion or garlic. Peel and dice the tomato.

Steam the potato until soft, then mash it with some mayonnaise and a bit of black pepper.

In a pan, heat some oil and sauté the chopped onion until fragrant.
Add the ground beef and stir-fry until browned. Add the diced tomato and stir well.
Season with 1 tablespoon oyster sauce, 1 tablespoon soy sauce, 1 tablespoon sugar, 2 tablespoons ketchup, a pinch of salt, and some black pepper.
Stir-fry until cooked through, then set aside. - 04
Heat a nonstick pan (no oil needed) over low heat. Place one tortilla in the pan.
On one half of the tortilla, layer mashed potato, then the beef mixture, then two slices of cheese. - 05
Fold the other half of the tortilla over the filling.
Continue to cook on low heat until the outside is golden and crispy, and the cheese is melted. - 06
Cut into 2–3 pieces.
Plate and serve — it looks and smells irresistible!
Advanced Tip
You can use store-bought tortillas or make your own. Homemade Tortilla Recipe:
Ingredients:
- All-purpose flour: 400g
- Dry yeast: 6g
- Salt: 4g
- Corn oil or olive oil: 18g
- Water: 240g
Steps:
- Mix all ingredients into a smooth dough. Cover with plastic wrap and let it rest for 10 minutes.
- Divide into small balls of about 50g each. Flatten into small discs and let them rest again for 10 minutes.
- Dust your surface with flour to prevent sticking. Roll each disc into a thin round about 8 inches in diameter.
- Heat a dry pan over medium heat. Place the tortilla in the pan and reduce to low heat. In about 40 seconds, small bubbles will appear — flip it quickly. After about 10 more seconds, it’s ready.
- Stack the tortillas and wrap them with plastic wrap to keep them from drying out.
- Freeze any leftovers for later use.
