Fresh Corn Salsa

Ingredients

  • 3 cups raw corn kernels* (from ~4 cobs)
  • 1 cup chopped red onion (~½ medium)
  • Optional: 1 ripe avocado, diced
  • ½ cup chopped fresh cilantro
  • 1–2 jalapeños, finely chopped (1 for mild, 2 for spicy)
  • ¼ cup lime juice (~2 limes)
  • 1 tbsp white wine vinegar
  • ¼ tsp chili powder
  • ¼ tsp ground cumin
  • ½ tsp salt

Instructions

    Combine all ingredients in a medium bowl. Mix well.

    Taste and tweak: More lime/vinegar = more zing; More salt = more flavor; More jalapeño = more heat

    Let it sit for 20 mins for best flavor.

    Store covered in fridge for 3–4 days.

Tips

CORN TIP: Raw sweet corn is best, but frozen (defrosted) works too.
