Ingredients
- 3 cups raw corn kernels* (from ~4 cobs)
- 1 cup chopped red onion (~½ medium)
- Optional: 1 ripe avocado, diced
- ½ cup chopped fresh cilantro
- 1–2 jalapeños, finely chopped (1 for mild, 2 for spicy)
- ¼ cup lime juice (~2 limes)
- 1 tbsp white wine vinegar
- ¼ tsp chili powder
- ¼ tsp ground cumin
- ½ tsp salt
Instructions
- 01Combine all ingredients in a medium bowl. Mix well.
- 02Taste and tweak: More lime/vinegar = more zing; More salt = more flavor; More jalapeño = more heat
- 03Let it sit for 20 mins for best flavor.
- 04Store covered in fridge for 3–4 days.
Tips
CORN TIP: Raw sweet corn is best, but frozen (defrosted) works too.
