LEMON CRINKLE COOKIES

Ingredients

  • 2 cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, melted & cooled
  • 1 cup sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tbsp lemon juice (fresh!)
  • 3 tsp lemon zest
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • Powdered sugar (for rolling)

Instructions

    - Mix flour, baking soda, and salt. Set aside.

    - In a big bowl, whisk butter + sugar. Add egg + yolk, then vanilla, lemon extract, juice & zest. Mix in dry ingredients until a soft dough forms. Chill for 2–4 hours.

    - Preheat oven to 325°F. Line 2 baking sheets. Add powdered sugar to a small bowl.

    - Roll dough into 1-inch balls, coat in powdered sugar, and space 2 inches apart on sheets.

    - Bake 10–12 mins, until edges are set and centers no longer jiggle. Cool before serving!
