Ingredients
- 2 cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, melted & cooled
- 1 cup sugar
- 1 large egg
- 1 large egg yolk
- 2 tbsp lemon juice (fresh!)
- 3 tsp lemon zest
- 1 tsp vanilla extract
- 1 tsp lemon extract
- Powdered sugar (for rolling)
Instructions
- 01- Mix flour, baking soda, and salt. Set aside.
- 02- In a big bowl, whisk butter + sugar. Add egg + yolk, then vanilla, lemon extract, juice & zest. Mix in dry ingredients until a soft dough forms. Chill for 2–4 hours.
- 03- Preheat oven to 325°F. Line 2 baking sheets. Add powdered sugar to a small bowl.
- 04- Roll dough into 1-inch balls, coat in powdered sugar, and space 2 inches apart on sheets.
- 05- Bake 10–12 mins, until edges are set and centers no longer jiggle. Cool before serving!
