Spaghetti Squash

Ingredients

  • 1 spaghetti squash (cut in half, seeds removed)
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 ½ cups chopped tomatoes
  • ¾ cup crumbled feta
  • 3 tbsp sliced black olives
  • 2 tbsp chopped fresh basil

Instructions

    Preheat oven to 350°F (175°C). Lightly grease a baking sheet.

    Place squash cut-side down. Roast ~30 mins, until fork-tender. Let cool a bit.

    While roasting, heat oil in a skillet. Sauté onion until soft, then add garlic for 2--3 mins.Add tomatoes and heat through.

    Scoop out squash "noodles" into a bowl.

    Toss with onion mix, feta, olives, and basil.
