Ingredients
- 1 spaghetti squash (cut in half, seeds removed)
- 2 tbsp vegetable oil
- 1 onion, chopped
- 1 garlic clove, minced
- 1 ½ cups chopped tomatoes
- ¾ cup crumbled feta
- 3 tbsp sliced black olives
- 2 tbsp chopped fresh basil
Instructions
- 01Preheat oven to 350°F (175°C). Lightly grease a baking sheet.
- 02Place squash cut-side down. Roast ~30 mins, until fork-tender. Let cool a bit.
- 03While roasting, heat oil in a skillet. Sauté onion until soft, then add garlic for 2--3 mins.Add tomatoes and heat through.
- 04Scoop out squash "noodles" into a bowl.
- 05Toss with onion mix, feta, olives, and basil.
- 06Serve warm and enjoy!
