Ingredients

  • ½ medium onion, diced
  • 1 tsp butter
  • 2 eggs
  • ¾ cup milk
  • ¾ cup Italian or seasoned breadcrumbs
  • 2 lbs lean ground beef
  • 1 tbsp ketchup or chili sauce
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley (or 2 tsp dried)
  • 1 tsp kosher salt (more to taste)
  • ½ tsp black pepper

Meatloaf Sauce

  • ½ cup chili sauce
  • ½ cup ketchup
  • 2 tbsp brown sugar (optional)

    Preheat oven to 350°F. Line a baking pan with foil and spray with cooking spray.

    Sauté onions in butter over medium-low heat until soft. Let cool.

    In a bowl, mix eggs, milk, and breadcrumbs. Let sit for 5--10 minutes.

    Add beef, onions, ketchup, seasoning, parsley, salt, and pepper. Mix until just combined.

    Shape into an 8"x4" loaf on the pan. Bake for 40 minutes.

    Mix chili sauce, ketchup, and sugar (if using) to make the topping. Spread over the loaf and bake another 15--30 minutes, until the center reaches 160°F. Broil 1--2 minutes if you want a caramelized top.
